My best friend Ryan created this delicious recipe for vegan parmesan cheese when we were in college. This stuff is what made the weekly (and sometimes nightly) midnight snacking on delivery pizza bearable. It tastes great on almost anything, but works best with pasta dishes. It’s also great sprinkled on your favorite pizza. I can personally attest to that. 😉
- 1 cup raw walnuts
- 1/3 cup nutritional yeast flakes, or more to taste
- Dash of garlic power
- Dash of onion powder (optional)
- Salt, to taste
Pulse all ingredients in a food processor so that no big chunks of walnut remain, taking care not to overprocess (this will turn your dry “sprinkle” into a wet paste). Store in an airtight container in the fridge.
Yield: 1 cup
