Here are a few things I’ve been making lately. The lack of pictures is a testament to how delicious they are — no time for pictures! My laziness (workin’ on that ;)) might have also contributed to the lack of pictures, but I can assure you that each and everyone one of these recipes is wonderfully delicious.
Raw Brownies — these are divine! Plus, they are much healthier than the usual baked good but taste just as rich and delicious. I prefer to eat these at room temperature when the frosting has melted a bit.
Almond Tofu with Snap Peas and Soba Noodles — I make this at least once a week, but I’ve been using peanut butter, broccoli and brown rice noodles instead.
Cookies ‘N’ Cream Cupcakes — I made these for my mom’s birthday party yesterday using Colleen Patrick-Goudreau’s chocolate cake recipe. I added 10 crushed oreos to the batter and 5 crushed oreos to buttercream frosting (use Colleen’s chocolate frosting recipe minus the cocoa powder). These were ridiculously easy and a hit at the party. Bonus: you don’t even need nondairy milk for the batter!
This isn’t a recipe, but I recommend it. 🙂
On another note, I can’t believe it’s only the second day of spring and I’m lounging on my couch in a summer dress! I almost treated myself to this gardening book at the bookstore tonight to celebrate the new season. I’m looking forward to an endless supply of salad greens and fresh herbs!
