We have my friend Ryan to thank for this recipe, which is healthier than the usual dessert filled with refined sugar and flours. It’s also very quick to make and doesn’t require the oven — perfect for the warmer months. I like to serve them cold straight out of the freezer.
Raw Brownie Batter Balls
3/4 c. raw walnuts
10 dates, pitted
2 tbsp. raw agave nectar*
2 tbsp. raw cocoa powder
ground cinnamon, to taste
ground dried vanilla bean (or extract), to taste
Process all ingredients in a food processor until relatively smooth, then roll into small balls by hand. Roll around in more cocoa powder, if desired, for a fancy “chocolate truffle” look. These babies are addictive!
*I substitute maple syrup, which is not a raw product, but is vegan. It also lends a more complex flavor!
