I made another green smoothie but left out the banana this time. There’s a whole range of issues behind this popular fruit and for those who try to eat food sourced closer to home, this recipe’s for you. Even without the overpowering flavor of the banana, the sweetness of the berries is enough to mask the taste of the greens.
- 1 cup nondairy milk (I used homemade cashew milk: 1 cup filtered water + 6 tbsp. raw cashews)
- 1 cup fresh or frozen berries (I used a mix of strawberries and blueberries)
- 1 cup packed spinach, rinsed
- 1 date, pitted
- a drop of pure vanilla extract
If making homemade milk, blend filtered water and cashews first. Add remaining ingredients and blend for a long time, until smooth. Enjoy immediately.
Yield: 1 large serving (for a meal) or two small
