Walnut Butter-Chocolate Chunk Cookies

The problem with me + baking cookies + living alone is that I can never just eat one. I had no problem when I lived in a house with ten roommates — they’d be gone within minutes. Now I’m just going to have to develop some restraint or (more likely situation) take them into work the next day. Tonight I made these cookies (once again) from Vegetarian Times, but I actually stuck to the recipe this time and used real sugar. They are really delicious — and rich — I noticed that after the fourth cookie. If you get gluten-free oat flour and oats, they are gluten-free. Since I didn’t make any changes to the recipe (except for cutting it in half — makes 1 dozen), I won’t re-post it, but you can find the recipe here.

Some side thoughts:

  • The Indian Slow Cooker by Anupy Singla: Has anyone used this book yet? My favorite aunt (Mom Jr.) gave me a slow cooker recently, and as soon as I found out about this book, I just had to have it. I haven’t made anything from it yet, but at the top of my list are aloo gobi and chana masala. I’ve heard that Anupy Singla is coming out with a vegan Indian cookbook soon too, which I’m sure will be awesome.
  • Sunny Mylk: I’ve recently been making sunflower seed milk instead of my usual cashew milk to save money. The sunflower seed flavor definitely shines through and might take some time to getting used to, but I’ve begun to appreciate it. I recently made waffles (using the old-fashioned chelsea waffles recipe in Vegan Brunch) with sunflower seed milk and chocolate chips and they were divine! I really like the combination. My recipe for the “sunny mylk” is 1 cup water + scant 1/2 cup sunflower seeds (soaked overnight) blended until smooth.
  • Recently I’ve been craving that Festive Chickpea Tart by Dreena Burton I posted about a few months ago. I think I’ll make it again, but I might go crazy and make a real flaky pie crust (the recipe in How To Cook Everything Vegetarian is perfect). Try it out if you haven’t already!
  • Last-minute holiday gift idea: Punk Rock Cookie Jar Mixes. Genius and what my broke self is going to give everyone this year!

I hope everyone is enjoying the holiday season. Still no (real) snow in St. Louis, but I’m keeping my fingers crossed.
